MUST be made the day before into order to fully
consummate the marriage of subtle flavorsThis was my father's base
recipe, only slighly modified by me--the original recipe was twice of
everything!!!)
- 5# white potatoes
- 7 hard boiled eggs (cooled and peeled)
- 1/2 quart real mayonnaise (NOT that "miracle" stuff)
- 1/2 cup prepared mustard (yellow or brown)
- 1 onion, chopped fine
- 4 celery stalks, chopped fine
- 1 dill pickle, diced
- 1/4 cup pickle juice
Boil potatos WHOLE until skins crack and start to fall off. drain,
remove peels (they should come off quite easily), set aside to cool.
Finely dice 6 of the hardboiled eggs; reserve other one to slice as a
garnish on top.
Finely dice the pickle.
In small bowl, combine mayonnaise, mustard and pickle juice.
In large bowl, put whole potatoes, dice the eggs and chop small over
potatoes, add pickle.
Add wet ingredients and mix with potato masher or wooden spoon just
until thoroughly mixed, then smooth into serving dish, smoothing top
with spatula or rubber spreader. Sprinkle with Cajun spices or
Seasoned Salt. (You can also add seasoned salt into the wet ingredients
if
you like).
