(new) Green Beans for Company


Excellent Green Beans!

  • 1 pound fresh green beans
  • 4 slices bacon (or 3 thick slices), cut raw into 1/4 inch pieces NOT cooked)
  • 2 Tablespoons butter
  • 1 cup sliced mushrooms (about 6-8 medium, stems removed, sliced)
  • 1 onion halved, then thin sliced

Clip tips and stems from beans, leave long.

Put beans and raw bacon bits into 3 quart saucepan, cover with water (just enough to cover, but not enough to swim freely). Bring quickly to boil, then reduce heat to medium, and simmer until al dente. Drain.

While beans are cooking, melt butter in medium cast iron skillet, sautee onions until translucent but not carmelized, add mushrooms, continue sauteeing a few more minutes.

Toss onions and mushrooms with green beans in casserole dish.

SOOOO easy, sooo tasty.
