Kiwi Salsa


  • 6 Creole Tomatos, seeds and juice removed, diced (or 2 pints cherry tomatos, cut into quarters).
  • 6 kiwi, peeled and diced
  • 2 Vidalia onions, chunkly diced (or 1 or 2 cups Holy Trinity)
  • 1/2 cup cilantro
  • Juice of 2 limes
  • Splash of hot sauce, to taste
  • Splash of Worcestershire, to taste
  • Salt and pepper to taste

Mix all well, refrigerate several hours to wed flavors. As with any good cooking, PLAY WITH YOUR FOOD - make it your own, experiment with various seasonings and spices.
