| 2 Tablespoons oil 2 (or 3) pounds beef steak (thick, cheap, whatever's on hand... or even cut stewing beef is fine) 2 large white potatoes, peeled, quartered lengthwise, cut into 2 inch chunks 2 large yellow onions, quartered and cut into chunks 2 large green bell peppers, seeds removed, cut into chunks 2 large carrots, peeled and cut into large chunks 2 stalks celery, cut into chunks 2 bottles British dark ale leftover from last week's party (set out to room temperature but don't open until ready to use) Splash Worcestershire, hot sauce, seasonings, salt and pepper to taste. In large cast iron Dutch oven over HIGH flame, heat the oil, then dump in the meat, searing quickly on all sides, turning over until all is evenly browned. Dump all the veggies on top of the meat, pour on the beer and let the foam subside, then pour on Worcestershire and hot sauce, sprinkle on the spices, cover with tight fitting lid and immediate put into a preheated oven at 350 degrees for 90 minutes. Do not remove the lid until time is up. Remove from oven, let sit on stovetop to cool for 15-20 minutes, while you steam up some broccoli or other veggies for the side. This stuff is GREAT cold, too -- slathered with hot sauce and ketchup!
