Country Potatos |

Wash, quarter and slice the potatoes, but do not peel. Steam (do NOT boil) for 20 minutes, or until potato chunks are cooked firm, but not over-soft. Sautee onions and mushrooms (okay, I cheated ... I used excess onions and mushrooms from the Green Beans) Lightly toss potatoes, green onions, sauteed onion and mushrooms, and cheese in large serving bowl. Can be modestly pressed, but these should be loose and chunky, not like regular mashed potatoes. Season as desired with salt and pepper.
