Country Potatos


  • Six medium white potatoes
  • 2 bunches green onions sliced thinly from bulbs up the stalk including up to 2 inches of the greens
  • 1 onion
  • 1/2 cup mushroom slices
  • 2 tablespoons butter
  • 1 cup grated cheese

Wash, quarter and slice the potatoes, but do not peel.

Steam (do NOT boil) for 20 minutes, or until potato chunks are cooked firm, but not over-soft.

Sautee onions and mushrooms (okay, I cheated ... I used excess onions and mushrooms from the Green Beans)

Lightly toss potatoes, green onions, sauteed onion and mushrooms, and cheese in large serving bowl. Can be modestly pressed, but these should be loose and chunky, not like regular mashed potatoes.

Season as desired with salt and pepper.
