Basic Egg-and-Cheese Sandwich Spread


How this happened:

I had just grated two one-pound blocks of cheese (1 cheddar and 1 colby-jack) and put them by to use for sandwiches during the week. After putting by 12 one-cup containers, and given the counter scrapings to Deefer (he'd already licked up the gratings that had fallen to the floor). And I STILL had about 3/4 or 1 cup left of the grated cheese mix.

So......

  • 2 hard boiled eggs
  • 1 cup grated cheese
  • 2 TBsp mayonnaise
  • 1 Tsp spicy brown mustard

Chop the eggs into a mixing bowl. With a pastry blender (or fork) chop the eggs into a fine crumbly mixture.

Add the cheese, mayo, and mustard. With the pastry blender continue mixing until you have a thick consistency, suitable for spreading.

You can add:

  • 1/4 cup choppped celery
  • 1/4 cup choppen onion
  • spices

or whatever else you like.
