Variant Potato Salad


This is a derivative of Almost Dad's Potato Salad, which is itself derived from the recipe my father used, according to my older brother.

  • 3 white potatoes
  • 1 sweet potato
  • 3 hard boiled eggs (cooled and peeled)
  • 1 cup mayonnaise
  • 1 TBsp prepared mustard (yellow or brown)
  • 1/2 cup Trinity
  • 1 dill pickle, diced
  • Splash Worcestershire sauce
  • Cajun spice or Seasoned Salt, to taste

Boil potatos WHOLE until skins crack and start to fall off. drain,
remove peels (they should come off quite easily), set aside to cool.

Finely dice hardboiled eggs (most easily done with a pastry blender or fork) until crumbly.

Dice the pickle, add it to egg.

Add mayonnaise, mustard, Trinity, Worcestershire and spices, mix thoroughly until nearly smooth.

In separate bowl, dice the potatoes into 1-inch chunks; add half of these to the egg and mayo mix, mash coarsely with potato masher or wooden spoon just until thoroughly mixed, then then add remaining potatoes.

Turn into serving dish, smoothing top with spatula or rubber spreader. Sprinkle with Cajun spices or Seasoned Salt to taste.
